This type of separation occurs when the coconut milk has been exposed to below freezing temperatures, sometimes occurring during transportation or storage in the winter months.
Since our coconut milks do not contain any added gums or stabilizers, when frozen the water will crystallize and separate from the coconut fat changing the texture once thawed. The thawed result will be coconut solids suspended in water instead of the typical homogenous texture.
Though our products are delivered by temperature-controlled vehicles during the colder seasons, the delivery process could accidentally expose the product to freezing temperatures. We recommend warming the product and using a blender or whisk to recreate the smooth consistency if you need to remove the coconut solids.
