Herbal Porridge

Serves 4
INGREDIENTS:
- 1½ cups red rice
- 1 cup gotukola, kale or other greens, washed and chopped
- 1 cup mukunuwenna, flat leaf parsley or other greens, washed and chopped
- 3 cups premium coconut milk
- 2-3 cloves garlic
- ½ tsp sea salt or to taste
- Black pepper, freshly ground, to taste
- Jaggery or maple candy to serve
DIRECTIONS:
- In a large saucepan, wash the red rice and drain starchy water three times or until water runs clear.
- Add 4 cups of water, cover and cook on low heat until the rice is cooked. Fluff with a fork and set aside.
- In a blender or food processor, add the cooked red rice, chopped greens, coconut milk and garlic and blend until smooth.
- Pour the herbal porridge back into the saucepan, add salt and pepper and warm for 5 minutes on low heat, stirring often.
- Serve hot with jaggery or maple candy and enjoy.
