Chocolate Mocha Spice Vegan Cheesecake

Serves 8-10
INGREDIENTS:
Crust
- ½ cup raw almonds
- ½ cup raw walnuts
- 6 Medjool dates, chopped
- 1 tbsp raw cacao powder
- 1 tbsp cacao nibs
- 1 tbsp ground coffee
- 2 tsp maple syrup
- 1 tsp vanilla extract
- pinch of sea salt
Chocolate mousse layer
- 1 cup raw cashews, soaked for two hours and drained
- 5 Medjool dates, chopped
- ½ cup plant-based milk
- ¼ cup irish moss, soaked overnight, well rinsed and drained
- ⅓ cup maple syrup
- ¼ cup cacao powder
- ¼ cup melted deodorized coconut oil
- 1 tbsp freshly ground coffee
- 3 tbsp cacao butter, melted
- 3 tbsp coconut cream (solid top layer from unshaken refrigerated can)
Spiced vanilla layer
- ½ cup fresh young coconut meat
- 6 tbsp fresh coconut water
- ¼ cup coconut cream
- ½ cup cashews, soaked for two hours and drained
- 3 tbsp maple syrup
- 2 tbsp irish moss, soaked overnight, well rinsed and drained
- ½ tsp vanilla extract
- ½ tsp freshly ground cardamon
- 5 tbsp melted coconut oil (neutral taste)
Spiced cacao powder
- 2 tbsp raw cacao powder
- 2 tbsp mesquite powder
- ¼ tsp ground nutmeg
DIRECTIONS:
Crust
- In a high speed food processor combine nuts, cacao nibs and coffee, pulse until coarse.
- Add Medjool dates, maple syrup, cacao powder, vanilla extract and sea salt, pulse until it well mixed.
- In a medium sized cake mold, evenly press crust mixture, set in the freezer while preparing the other layers
Chocolate mousse layer
- In a high speed blender, combine all ingredients except coconut oil and cacao butter and blend well.
- Add coconut oil and cacao butter, blend until smooth.
- Pour mixture over crust and set in freezer for a minimum of 30 minutes
Spiced Vanilla Layer
- In a high speed blender, combine all ingredients except coconut oil and blend well.
- Add coconut oil and blend until smooth.
- Pour finished mixture over chocolate mousse layer and set in freezer minimum 4 hours.
- Set aside ¼ of mixture for decorating (optional).
Spiced Cacao Powder
- In a small bowl combine all ingredients and mix well.
- Lightly sprinkle spiced mixture on top of spiced vanilla layer.
Using a piping kit decorate the cake using the spiced vanilla icing. Garnish with chopped cacao nibs, coffee beans and vegan chocolates.
