Spiced Apple Crumble

Serves 6-8
INGREDIENTS:
Spiced Apple Filling
- 5 apples with peel, diced
- ¼ cup fresh lemon juice
- 1½ tsp ground true cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground ginger
- ½ tsp sea salt
- 1 Tbsp deodorized coconut, melted
Crumble Topping
- 1¾ cup old fashioned rolled oats
- ½ cup almond or chickpea flour
- ¾ cup coconut or maple sugar
- 1½ Tbsp maple syrup
- ¾ tsp ground true cinnamon
- ½ tsp sea salt
- 6 Tbsp neutral tasting coconut, melted
DIRECTIONS:
- Preheat oven to 375°F .
- In a large bowl, combine all ingredients for the apple filling, stirring well, then transfer to a deep baking dish.
- Using a food processor or high speed blender, combine 1 cup of oats with the all other topping ingredients and pulse until the mixture begins binding together.
- Add remaining oats and pulse a few more times.
- Cover the filling with the pulsed oat mixture, pressing down to form an even topping.
- Bake at 375°F for 30 minutes, then remove from oven and let cool slightly before serving warm.
