Herbal Porridge

Serves 4

INGREDIENTS:

  • 1½ cups red rice
  • 1 cup gotukola, kale or other greens, washed and chopped
  • 1 cup mukunuwenna, flat leaf parsley or other greens, washed and chopped
  • 3 cups premium coconut milk
  • 2-3 cloves garlic
  • ½ tsp sea salt or to taste
  • Black pepper, freshly ground, to taste
  • Jaggery or maple candy to serve

DIRECTIONS:

  1. In a large saucepan, wash the red rice and drain starchy water three times or until water runs clear.
  2. Add 4 cups of water, cover and cook on low heat until the rice is cooked. Fluff with a fork and set aside.
  3. In a blender or food processor, add the cooked red rice, chopped greens, coconut milk and garlic and blend until smooth.
  4. Pour the herbal porridge back into the saucepan, add salt and pepper and warm for 5 minutes on low heat, stirring often.
  5. Serve hot with jaggery or maple candy and enjoy.
