Peachy Coconog

Serves 2

INGREDIENTS:

  • 1 ¼ cups almond or soy milk
  • ½ cup coconut cream
  • ¾ cups raw cashews, soaked
  • 1 tsp vanilla extract
  • 2-3 Tbsp coconut nectar or maple syrup
  • 2 Medjool dates, pitted
  • 1 ripe peach, diced
  • 1/2 tsp nutmeg, ground 
  • 1/2 tsp true cinnamon, ground
  • ¼ tsp cloves, freshly ground
  • Pinch of sea salt

DIRECTIONS:

  1. In a high-speed blender, blend ingredients together until smooth.
  2. Serve in glasses or mugs and garnish each glass with a dash of nutmeg and a true cinnamon quill.
